Portuguese Jewish cuisine | Shared lunch (PL/EN)

During cookery workshops at the Jewish Culture Festival, we will travel along the coast of the Mediterranean Sea. We will visit Italy, Portugal, as well as Greece and Spain to show that the table can bring together different nations and religions and that nothing is more certain than transitions in the kitchen.

PORTUGAL

Almost no one remembers the rich history of Jewish cuisine in Portugal. It’s funny because historians emphasize that one of the flagship dishes of Portuguese cuisine, cod croquettes, is actually Jewish heritage. So we will fry them and serve them with other dishes that were present on Shabbat tables in the past.

 

Salada de favas – legumes were ubiquitous in the menu of Portuguese Jews, we will show you that broad bean salad is delicious!

Pasteisde bacalhau – cod croquettes, few people today remember that it was a dish of Portuguese Jews, but historians are sure of the fact.

Caldeirada – in Portugal there is a version with fish and seafood, there is also another, less known version with only fish, the difference was insignificant, but enough to confuse the Portuguese Inquisition.

Arozzdoce – another example of a dish that combined two Portuguese tables – the Jewish and the Christian, the world forgot about it but luckily historians remember.
