Spanish Jewish Cuisine | Joint Dinner (PL/EN)
27.06.2024 - 17:00 / Hotel Eden, ul. Ciemna 15During cookery workshops at the Jewish Culture Festival, we will travel along the coast of the Mediterranean Sea. We will visit Italy, Portugal, as well as Greece and Spain to show that the table can bring together different nations and religions and that nothing is more certain than transitions in the kitchen.
SPAIN (VEGETARIAN)
Although most of the Jews fled from Spain after 1492, they left behind a lot of culinary souvenirs. There are pancakes perfect for the Feast of Trumpets and eggplants that no one in Europe wanted to eat. We will tell you why and show you how to prepare them on the first day, and then we will follow in the footsteps of those who, abandoning their homes, wonderfully enriched the cuisine of other countries with completely new ideas.
Keftes de prasa – leek cutlets, perfect for the Feast of Trumpets if you like Rosh Hashanah.
Berenjenas con miel – in the past, few people ate eggplants, Jewish cooks had to prepare them, and one of the simplest and most delightful snacks in Spain are eggplants fried with honey.
Arroz con habas – rice with broad beans, sometimes with beans, a simple dish, known under many names, we will make it the Sephardic style with saffron.
Almendrados – known in Spanish monasteries and as dessert of Andalusian Jews.
